Ingredients
1 & 1/2 oz Rosemary Infused Gin
1/2 oz Orgeat Syrup
1/4 oz Lemon Juice
Splash of Prosecco
A touch of smoke
Bubbly, herbaceous and complex. This cocktail is one I’m most proud of creating. I haven’t stumbled into any quite like it, as most of the gin spritz’ that use lemon and rosemary have soda water and some kind of rosemary simple syrup. I infused a bottle of gin with fresh rosemary, letting it sit for a few days for the flavor to alter the gin. Typically, with herbs & spices (depending on strength) it can take 3 days up to a week before you can get the desired flavor.
Instructions:
This is another wonderful cocktail that you can build in the glass. Fill your glass with ice, and top first with your gin, followed by the orgeat and lemon juice.
Pop the top on your bubbly and share with your cocktail glass.
Grab a sprig of fresh rosemary and hit the edges with a flame, singeing the tips and producing smoke. This will hit your nose while taking the first sips and slightly change the cocktails flavor.

In the beginning, I was topping the drink with the smoker and adding the smoke directly to the cocktail. I decided that this was a little too smoke forward for my preference. And with not much room left in the glass to force the smoke into the drink, I pivoted to lighting the rosemary garnish instead.
